Steps to make Lumpiang Shanghai (Pork Dumplings):
  1. Mix together the pork, carrots, garlic, onion, parsley, egg, and soy sauce in a big mixing bowl. Add 2-3 pinches of salt.
  2. Place a peace of lumpia wrapper on a flat surface. At the bottom end, add 1 tbsp of the lumpia filling mix.
  3. Arrange the filling to flatten it and elongate in a semi oblong shape.
  4. Roll the bottom part of the wrapper over the filling.
  5. Fold each side over the filling.
  6. Roll the lumpia towards the last quarter of the end.
  7. Wet your fingers with water and carefully spread the water over the last quarter bit of the wrapper. Imagine you are putting glue on a piece of paper.
  8. Roll the lumpia over the watered end and so you now have a lumpia roll!
  9. Do these steps for all the lumpia wrappers.
  10. To cook: heat a frying pan on medium heat. Add cooking oil. Once hot, put in the lumpia one by one, careful not to overcrowd the pan.
  11. Turn on each side for 1 to 2 minutes until golden brown.
  12. Serve!! Optionally, you can cut up the lumpia into small bit size pieces for happier days :)
  13. For a dipping sauce, combine equal parts soy sauce and vinegar. Add a couple of red chilli.

The filling or meat mixture is mainly composed of ground pork, carrots, and onion. There are three major steps in making lumpia. Normaly, it takes some time to wrap it individually. The longer it sits at normal temperature while you are doing the wrapping process makes the other wrapped rolls already saggy just even before you fry it.
