- In a pan, add 1 tsp of butter/oil at medium heat. Then add shredded broccoli, sliced green chillies and a pinch of turmeric powder. Cook it for 2 to 3 minutes in open pan till it is bright green in color and its raw smell subsides. Add salt to taste.
- Beat two eggs with a pinch of salt. Add the above prepared broccoli to the beaten eggs and mix well. (If you need more spice, you can add black pepper powder to this mixture).
- Grease the same pan with half tsp of butter/oil and pour the mixture into the pan in low heat. Cook both the sides and serve it.
In a large frying pan, with ovenproof handle, heat the oil over medium heat. This is a quick low point breakfast, perfect to use up your leftover broccoli and a great way to get veggies into your breakfast. Steam the broccoli, either in a microwave or steamer, until tender and reserve. Melt the butter in an omelet pan or small skillet over medium-high heat. This omelet comes together in less than three minutes (including prep and cooking!).
