Instructions to make Green Pepper Pasta:
- Bring a medium pot to medium high heat. Add your olive oil, garlic and onions. Saute for about 2-3 minutes or until onions start to soften.
- After 2-3 minutes add your green peppers and continue to saute for 8 minutes. After 8 minutes add your wine and bring to high heat and reduce wine by 3/4. Then add your vegetable stock and heavy cream and simmer for 20 minutes.
- After 20 minutes poor into a blender and blend for 1 minute. Then set aside for later.
- In a pot bring 3 cups of water to a boil. Add 8 oz of spaghetti noodle. Boil for 10 minutes or until pasta is al dente.
- In a medium pan add 1 tbsp of olive oil onion tomatoes and mushrooms and saute for 5 minutes. After 5 minutes poor your sauce in the pan and mix for 2 minutes. Add pasta into mixture and toss for 5 minutes, add parmesan and parsley and serve.
Pasta in Creamy Green Pepper Sauce. I added a small can of stewed tomatoes after the peppers and onion sauteed and then tossed the cooked pasta into the same pan to let it absorb the olive oil flavor a bit. Tasted great and heated up well in the microwave the next day. A lightning fast supper to put together at the last minute, but one that your family will absolutely love. Finish with a sprinkling of grated Parmesan, if desired.
